Making a breakfast casserole in the Instant Pot® is great for multiple reasons. To start, you can make breakfast for a big group of people with very little effort. You can also toss everything in your Instant Pot®, get ready for work, and come back to a cooked egg breakfast. This breakfast casserole is also extremely versatile and you can easily add any different veggies or breakfast meats- whatever you have in the fridge! Save this recipe as you will surely need it many times throughout the week.

Equipment

  • Measuring Cup
  • Measuring Spoon
  • Whisk
  • Serrated Knife
  • Cutting Board
  • Mixing Bowl
  • 7” Cake Pan
  • Instant Pot® Trivet/Wire rack

Ingredients
  

  • 6 Eggs
  • 0.5 cup Milk
  • 0.25 cup Shredded Cheddar Cheese
  • 1 tsp Salt
  • 0.25 tsp Ground Black Pepper
  • 1 cup Mushrooms, sliced
  • 0.5 cup Tomatoes, diced
  • 1 cup Baby Spinach

Instructions
 

  • In a large mixing bowl, whisk together the eggs, milk, cheese, salt and pepper. Make sure eggs are whisked well!
  • Add the vegetables to the egg mix and stir briefly.
  • Pour mix into a seven inch cake pan or any heat proof container that will fit inside your Instant pot.
  • Place the metal trivet inside the Instant Pot® and add 2 cups of water to the bottom of the pot. Place the Cake pan with eggs in it inside the Instant Pot® then close the lid. Make sure the steam valve is set to “seal” and then press “manual” and set the timer for 20 minutes. Once the times has gone off and your eggs are done cooking, do a manual pressure release by turning the steam valve to “vent”-be careful as hot steam will be coming out!
  • Serve casserole immediately while still hot.
