Equipment

  • Measuring Cup
  • Measuring Spoon
  • Rubber Spatula
  • Serrated Knife
  • Cutting Board
  • Mixing Bowl
  • 7” Cake Pan
  • Instant Pot® Trivet/Wire rack

Ingredients
  

  • 8 Slices Whole Wheat Bread
  • 8 Egg Whites
  • 2 Cups Almond Milk
  • 0.25 cup Stevia
  • 1 tsp Cinnamon
  • 0.25 tsp Nutmeg
  • 1 tsp Vanilla Extract

Instructions
 

  • In a large bowl, whisk together the egg whites, almond milk, stevia, cinnamon, nutmeg and vanilla and set aside.
  • Cut the bread into cubes about one inch big and place into the egg and milk mix. Press the bread down to make sure it is all covered in liquid and absorbing the tasty juices. Let sit for 30 minutes.
  • Pour the bread pudding mix into the 7 inch cake pan and then cover the top of the pan with foil.
  • Place the trivet inside the Instant Pot® along with one cup of water. PLace the bread pudding on top of the trivet and close the Instant Pot®. Make sure the steam valve is set to “seal” and then press the “manual” button and set the timer for 30 minutes. Once the timer has gone off, indicating the bread pudding is done, let the steam release naturally for 15 more minutes (that means don’t touch anything, just let the Instant Pot® work it’s magic!). After 15 minutes, open the steam valve to let any remaining pressure out.
  • Remove the bread pudding from the Instant Pot® and scoop and serve immediately while still warm! Top with whipped cream, ice cream or keep it plain for a great low calorie dessert.
