Instant Pot® Strawberry Lime Jam

When strawberries are fresh and you are looking for a way to keep them around forever, this jam is the answer. You can make this jam much faster than making a traditional recipe which can take hours of stirring strawberries over a hot stove. All the fresh ingredients go into the pot and out comes a refreshing strawberry lime jam which you can then freeze and use later on, anytime you are craving the taste of summer.

Equipment

  • Measuring Cup
  • Measuring Spoon
  • Cutting Board
  • Paring Knife
  • Small Bowl
  • Small Stirring Spoon
  • Jam jar
  • Rubber Spatula or Spoon

Ingredients
  

  • 2 Pounds  Strawberries
  • 1 cup  Sugar
  • 1 teaspoon  Lime Zest
  • 3 Tablespoons  Lime Juice
  • 3 Tablespoons  Cornstarch
  • 2 Tablespoons  Water

Instructions
 

  • Remove the stems from the strawberries and cut each berry into quarters.
  • Place the strawberries in the instant pot along with the sugar, lime zest and lime juice. Stir together to coat the strawberries in the sugar mix.
  • Place the lid on the Instant Pot® and set the pressure valve to “seal”. Press the ‘Manual’ button and make sure the pressure is set to high ( a light should come on indicating that the pressure is high). Set the timer for 1 minute. Once the timer is done, let the Instant Pot® naturally release the steam for 15 minutes. Open the steam valve and allow the remaining pressure to escape.
  • In a small bowl, mix together the cornstarch and water until a smooth paste is formed. Add the cornstarch mix to the strawberries in the Instant pot and then press the “saute” button.
  • With the lid off, allow the strawberry mix to come to a full boil, stirring often. The jam will begin to thicken as you stir. Once nice and thick like jelly, pour it into a container and use whenever you’d like! You can also opt to freeze the jam for a later date- a great way to preserve summer in a jar!
