Remove the stems from the strawberries and cut each berry into quarters.
Place the strawberries in the instant pot along with the sugar, lime zest and lime juice. Stir together to coat the strawberries in the sugar mix.
Place the lid on the Instant Pot® and set the pressure valve to “seal”. Press the ‘Manual’ button and make sure the pressure is set to high ( a light should come on indicating that the pressure is high). Set the timer for 1 minute. Once the timer is done, let the Instant Pot® naturally release the steam for 15 minutes. Open the steam valve and allow the remaining pressure to escape.
In a small bowl, mix together the cornstarch and water until a smooth paste is formed. Add the cornstarch mix to the strawberries in the Instant pot and then press the “saute” button.
With the lid off, allow the strawberry mix to come to a full boil, stirring often. The jam will begin to thicken as you stir. Once nice and thick like jelly, pour it into a container and use whenever you’d like! You can also opt to freeze the jam for a later date- a great way to preserve summer in a jar!
