Ingredients

  • 1 cup Brown Rice
  • 3.25 cups Whole Milk
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.25 teaspoon Cloves
  • 1 cup Canned Coconut Cream

Instructions

  • Place the rice, milk, vanilla, cinnamon, nutmeg and cloves in the Instant Pot®. Place the lid on the pot and seal, making sure the valve is turned to “seal”.
  • Press the “porridge” button on the Instant Pot® and let it cook! The Instant Pot® porridge setting should default to 20 minutes cooking time which is perfect. Once the timer goes off to indicate the pudding is done, let the Instant Pot® naturally release the pressure for ten minutes then, carefully open the steam valve and let the remaining pressure out and remove the lid.
  • Pour the coconut cream into the rice pudding and stir. Serve warm or allow he rice pudding to cool in the fridge before serving.
