Dice the apples into pieces about ¼ to ½ inch big
Place the diced apples in a small bowl and toss with the 2 teaspoons cinnamon and 2 Tablespoons of brown sugar. The apples pieces should be nicely coated in the mix
In a separate small bowl, combine the remaining dry ingredients (the flour, baking powder, salt, nutmeg, cinnamon and remaining brown sugar).
Add the coconut oil, eggs and vanilla extract to the bowl and mix everything together with a rubber spatula making sure there are no lumps. The batter will be thick but that is okay!
Spread half of the batter in the bottom of a greased 7 inch cake pan. Sprinkle half of the spices apples on top of the cake batter. Then, layer the remaining batter on top of the apples (sealing them in the middle) and then top with the rest of the diced apples.
Cover the cake pan with foil and place on a wire trivet rack inside the Instant Pot®. Add one cup of water to the bottom of the Instant Pot® and then place the lid on and turn the steam valve to “seal”. Press the “manual” button and set the timer for 50 minutes. Once the timer goes off, let the pressure naturally release (meaning just don’t touch the pot until it unlocks the lid and you can open it up- will take about 15 minutes).
Remove the cake from the pan and place on a wire rack to cool. Then slice and serve! Top with caramel drizzle for an extra delicious treat!
