Instant Pot® Turkey Breast with Gravy

Ingredients

  • 4 Pounds Turkey Breast, Bone In, Skin on
  • 0.5 tsp Salt
  • 2 Tbsp Olive Oil
  • 0.25 tsp Ground Black Pepper
  • 0.25 tsp Dried Basil
  • 0.25 tsp Dried Parsley
  • 0.5 tsp Dried Thyme
  • 1 Medium Onion
  • 2 Stalks Celery
  • 1 stick Carrot
  • 3 Cloves Garlic
  • 2 cups Chicken Broth
  • 1 Tablespoon Corn Starch

Instructions

  • Pour the olive oil in the bottom of the Instant Pot® and press the ‘Saute Button’. Place the turkey breast inside and then sprinkle with the salt and pepper. Let the turkey breast sear for about 5 minutes and then flip and sear the other side.
  • While the turkey is searing, chop the onion, garlic, celery and carrots.
  • Once the turkey has seared and the outside skin is browned, remove the turkey breast from the Instant Pot® and set aside. Pour the chicken broth into the Instant Pot® and use a wooden spoon to scrape the bottom of the pot, getting all the delicious crisp pieces of turkey that are stuck on the bottom mixed into the broth. Turn the Instant Pot® off.
  • Add the chopped veggies to the Instant Pot® along with the broth. Then, place the Instant Pot® trivet rack inside the pot on top of the vegetables. It’s okay if the rack touches the veggies! Place the turkey breast on top of the trivet them close the pot, seal the lid and make sure the steamer valve is set to “seal”. Press the “manual” button and set the timer for 30 minutes at high pressure. When the timer goes off and the Instant Pot® is done cooking, let the steam naturally release from the pot (this can take about 15 more minutes).
  • Remove the cooked turkey breast and set it aside on a plate. Place the strainer over the medium bowl and pour the contents of the Instant Pot® bowl through the strainer, separating the veggies from the broth. Pour the broth back into the Instant Pot® and discard the veggies.
  • In a separate small bowl, stir together the cornstarch with ¼ cup of water. Mix until there are no lumps
  • Add the cornstarch mix into the Instant pot with the broth mix and stir. Press the “saute” button and let the mix come to a boil. It will begin to thicken after about 1-2 minutes of boiling and become a delicious gravy for your turkey. Slice the turkey breast and pour some gravy over the top! Enjoy!
