Instant Pot® Garlic Mashed Potatoes

Ingredients

  • 2 Pounds Red Potatoes
  • 4 cloves Garlic, minced
  • 0.66 cup Chicken Broth or Water
  • 1 tsp Salt
  • 0.5 tsp Ground Black Pepper
  • 4 Tbsp Butter

Instructions

  • Chop the red potatoes into cubes about 1 inch large. No need to peel them, the skins are delicious and pretty!
  • Season the potatoes with the garlic, salt and pepper then pour the chicken broth in. Place the cover on the Instant Pot® and set the steamer valve to “seal”. Press the “Manual” button and set the timer for 8 minutes. When the times goes off, carefully push the steamer valve to the open position to release the pressure. Remove the lid
  • Use a fork to gently mash the potatoes. They will easily be squashed by a fork and once fully mashed, you can whip them slightly with the fork to fluff them as well.
  • Add the butter to the potatoes and mix.
  • Serve the potatoes while hot with your choice of garnish!
