Chop the red potatoes into cubes about 1 inch large. No need to peel them, the skins are delicious and pretty!
Season the potatoes with the garlic, salt and pepper then pour the chicken broth in. Place the cover on the Instant Pot® and set the steamer valve to “seal”. Press the “Manual” button and set the timer for 8 minutes. When the times goes off, carefully push the steamer valve to the open position to release the pressure. Remove the lid
Use a fork to gently mash the potatoes. They will easily be squashed by a fork and once fully mashed, you can whip them slightly with the fork to fluff them as well.
Add the butter to the potatoes and mix.
Serve the potatoes while hot with your choice of garnish!
