Instant Pot® Chocolate Mousse

Equipment

  • Instant Pot
  • Measuring Cup
  • Measuring Spoon
  • Rubber Spatula
  • Small saucepan
  • Ladel or cup with spout for pouring
  • 4- 4 ounce ramekins, ceramic or glass
  • Tongs

Ingredients

  • 4 each Egg Yolks
  • 0.5 cup Stevia
  • 0.33 cup Cocoa Powder
  • 1.5 cups Almond Milk
  • 1 teaspoon Vanilla Extract
  • 0.5 teaspoon Salt

Instructions

  • Begin by whisking the egg yolks in a bowl with ¼ cup of the stevia. Whisk until the yolks are fluffy and thick, about tripled in size. Set the whipped yolks aside.
  • In a small saucepan, combine the remaining stevia, cocoa powder, ¼ cup of water and almond milk. Use a rubber spatula to stir constantly until the stevia has melted. Try not to boil the mix but just gently heat it. Turn off the heat and add the vanilla extract and the salt. Let the mix cool until it is just warm to the touch.
  • Pour the warm chocolate and milk mix into the whipped yolks, adding the warm mix slowly as to not cook the eggs. Stir constantly.
  • Use a ladle or a cup with a spout to pour the mix into four, four ounce ramekins or glass jars.
  • Place the jars on a wire rack inside the instant pot and add 1 ½ cups of water to the bottom of the pot. Seal the Instant pot and make sure the steam valve is set to seal. Press the ‘Manual’ button and set the timer for 6 minutes. It will take about 5 minutes for your Instant Pot® to come to full pressure and begin the actual 6 minute countdown so don’t think you are doing anything wrong if the numbers don’t immediately start going down! After 6 minutes, do a manual release of the steam by turning the valve on top to release the pressure.
  • Use a Pair of tongs to remove the jars and let them cool. Serve alone or paired with some whipped cream!
