Ingredients
  

  • 1.5 pounds Beef Chuck
  • 0.25 tsp Ground Black Pepper
  • 0.25 tsp Salt
  • 1 Tbsp Olive Oil
  • 0.5 cup Onion. chopped
  • 1 Tbsp Garlic, minced
  • 1 cup Beef Broth
  • 0.5 cup Coconut Aminos
  • 3 Tbsp Stevia Powdered Sweetener
  • 0.125 tsp Red Pepper Flakes
  • 1 pound Broccoli Florets
  • 1 Tbsp Xanthan Gum

Instructions
 

  • Cut the beef chuck into strips about ½ inch thick and 3 inches long. Season with the ground black pepper and salt. Place the beef into the instant pot along with the olive oil and onions and press the ‘saute’ button. Sear the beef for about 1-2 minutes on each side. Add the garlic and cook for another minute.
  • Mix the beef broth, coconut aminos, stevia and red pepper flakes in a small bowl and then pour into the Instant Pot® and put the cover on. Seal the Instant Pot® and make sure the steam valve is also set to “seal”. Press the “Manual” button and set the Instant Pot® to cook on High Pressure for 12 minutes. When the timer is done, do a manual pressure release by carefully opening the steam valve to let out all the steam.
  • Add the broccoli to the Instant Pot® and close the pot again. Seal and press “manual”, setting the timer for one minute. When the time is up, again do a manual pressure release by opening the steam valve.
  • In a separate small bowl, whisk together the xanthan gum with ½ cup of the cooking juice from the Instant Pot®. Pour the mix into the Instant Pot® and press “Saute”. When the mix comes to a boil, turn the pot off and the sauce should be nice and thick.
  • Serve while hot, paired with rice if you are not on a Keto diet or just alone on the plate if you are trying to eat low carb (there’s enough flavor in this dish that you don’t need anything extra anyway!).
